Roasted and Marinated Beet Salad with Smoked Yogurt, Pistachio, and Orange Zest

Ingredients
Beets
- 2 lbs red and golden beets
- Olive oil
- Salt
Marinade
- 2 tablespoons sherry vinegar
- 3 tablespoons olive oil
- Pinch of salt
Smoked Yogurt
- 1 cup Greek yogurt
- Lemon juice
- Smoked salt or light smoked paprika
Garnish
- Crushed roasted pistachios
- Fresh orange zest
- Fresh thyme
- Black pepper
Instructions
- Roast beets wrapped in foil at 400°F until tender, about 45 to 60 minutes. Cool, peel, and cut into wedges.
- Toss warm beets with marinade and let sit 15 minutes.
- Mix yogurt with lemon juice and smoked salt to taste.
