3 to 4 cups low-sodium chicken or vegetable stock

2 tbsp olive oil

3 tbsp unsalted butter

8 to 10 oz mushrooms, sliced (cremini, shiitake, oyster, or a mix)

1 small shallot, finely chopped

2 garlic cloves, minced

3/4 cup Arborio or Carnaroli rice

1/2 cup dry white wine (optional, can substitute extra stock plus 1 tsp lemon juice)

6 to 8 fresh sage leaves

1/3 to 1/2 cup grated Parmesan, plus more to finish

1 tsp lemon zest, optional

Directions

Heat the stock in a small pot and keep it at a low simmer.

In a wide pan, heat 1 tbsp olive oil and 1 tbsp butter over medium high heat. Add mushrooms and cook 6 to 8 minutes until browned and most moisture has cooked off. Season with salt and pepper, then transfer to a bowl.
